It’s that time of year again when the leaves start changing colors, the weather gets colder, and pumpkin spice everything starts appearing in stores.

That’s right, it’s autumn! One of my favorite things to do during this season is going apple picking. There are so many different types of apples to choose from, and they all taste delicious when cooked into a warm sundae.

Okay. Confession time. Are you ready?

…I’m lactose intolerant. “But , ALL of your recipes include cheese!” Yes, I know. “But, doesn’t it make you feel sick?” It’s not so bad, and it’s definitely worth it. “But, why are you having a conversation with yourself?” It’s my cheese addiction combined with my lactose intolerance that’s made me go insane.

When I was young, I would eat American cheese singles right out of the wrapper. I loved milk. And my favorite summertime snack was French vanilla ice cream topped with chocolate syrup.

I didn’t become lactose intolerant until my early 20’s. Apparently, adult onset lactose intolerance is a thing. And when it happened, I thought – Oh no! Don’t take my cheese! Anything but my cheese! 

Still, I had to reduce my dairy intake as much as possible and switch to soy products. (Btw, did you know soy milk is freakin’ delicious?) For this exact reason,

I absolutely LOVE this recipe because I can eat it with a whole lot of soy ice cream on the side.

The best thing about these apple sundaes are the apples themselves. They soften and absorb the honey and butter. Then when you top it with cinnamon and sugar, it actually tastes like apple pie filling, making this kind of like an apple pie a la mode – my favorite diner dessert. Except they don’t have soy ice cream at diners. Oh well.

How to make Spiced Apple Sundaes

  2. Add apples, stir to coat, and saute for 10 minutes until softened.
  3. Add brown sugar, orange juice, cinnamon, and ginger if desired. Stir to combine. Cook about 1 more minute until syrupy.
  4. With a slotted spoon, scoop out apples and divide between two bowls alongside ice cream. Pour remaining sauce over entire bowl, and top with toasted walnuts.
