Marinating alone, contrary to common opinion, would not save grilled quarter leg chicken from drying out. It has to be perfectly timed when baking.

Ingredients you’ll need

  • ¼ Chicken legs. Dark meat such as thighs and drumstick is what I would recommend for this recipe. Chicken leg quarters combine the two pieces.
  • Chicken seasoning. Any chicken seasoning you like and currently have at your disposal will do.
  • Cayenne pepper. I used cayenne pepper for its colour and hotness. If you are sensitive to chilli use paprika as it is mild and will render almost the same results.
  • Mayonnaise. Mayonnaise is a great binder, allows the spices to stick to the meat and not burn. Perhaps the greatest advantage a mayo marinade gives you is the ability to easily incorporate flavours.
  • Lemon juice. Lemon is a classic flavor for marinating chicken, especially when paired with black pepper, lemon juice, and zest brighten up the flavor of the chicken and tenderize it at the same time.
  • Fresh thyme. Brings fresh flavor.
  • Salt and pepper. To taste.
  • Wholegrain mustard. Dijon or yellow mustard will also be a great choice for this recipe.
  • Garlic flakes.Adds a distinctive garlic flavor without the texture.

How to make Grilled Chicken Leg Quarters

  1. Preheat the oven to 170°C /338°F.
  2. In the oven tray, place the chicken and season with salt and pepper.
  3. Add the chicken seasoning, cayenne pepper, wholegrain mustard, fresh thyme, garlic flakes, mayonnaise, and lemon juice to a medium-sized bowl.
  4. Marinate the chicken and leave it to marinate for 30 minutes in the fridge.
  5. Place the marinated chicken in the oven and grill for 40 minutes.

These Grilled Chicken Leg Quarters are simply seasoned with spice rub and flamed in the oven, a juicy & delicious addition for any dinner!

  • 4 Quarter chicken legs
  • 1 Tbsp Cayenne pepper
  • 1 Tbsp Mustard
  • 4 Tbsp Mayonnaise
  • 2 Tbsp Thyme
  • 1 Tbsp Lemon juice
  • 1 Tsp Garlic flakes
  • 2 Tsp Salt and pepper
  • 2 Tbsp Chicken seasoning

Instructions

  1. Preheat the oven to 170°C /338°F.

When you’re finished cooking it if the skin is not as crisp as you want, shift the oven rack up and turn the broiler on. . Keep an eye on it the trick can only be done for a few minutes!

Do not overcook the chicken leg quarters. Once they are done cooking remove them from the oven and allow to cool on a cooling rack. Baked goods continue to cook on the inside even after they have been removed from the oven. These chicken leg quarters are no exception.
